Cooking Light's Lighten Up, America Interview

Now that our bellies are full from Thanksgiving, I thought this would be a good time to post some lighter cooking tips.

Cooking Light's contributing editor, Allison Fishman Task, recently went on a round trip crisscrossing the country in search of the country's favorite regional foods and lightening them for healthier eating in her new cookbook: Lighten Up, America!

Allison shows the reader how to take classic regional recipes and make them lighter and healthier with a few simple substitutions and smart cooking techniques. Cooking Light Editor Scott Mowbray sums it up best in his intro to the book by saying these recipes are "classic flavors served up for a healthier generation." 

I was able to chat with Allison via e-mail about her cookbook and healthy eating tips.

Allison: I love American history and our American food traditions. There's always a great story to go along with an American-conceived dish or ingredient (you'll find many of these in the book). But sadly, I find that so many folks are rejecting American classics in favor of more contemporary "healthier" foods. I wanted to remake our classic dishes (crabcakes, deviled eggs, jalapeno poppers, meatloaf) to make them better for you, so that people would embrace them, and feel good about eating them once again.  

Where did your travels take you?
Allison: Clear across the country, from Maine to Hawaii. As the host of Yahoo's Blue Ribbon Hunter, I've been traveling for 2 years, to over 60 cities and small towns. From the Roadkill Festival in a one-stoplight town of Marlinton, West Virginia to the Tamale Festival in Indio, California, and the Eelpout Festival (a festival on a frozen lake!) in Walker, Minnesota.

What’s your favorite regional classic dish that you lightened up?
Allison: You're asking me to pick favorites! Yowza. For flavor alone, I love the revisions to Texas Sheet Cake (video). I'd take this cake over the heavier version any day. I'm really happy with how the Philly Cheesesteak came out -- still filling and delicious, without the food hangover you'd get from the traditional one. My favorite classic American dish is Jalapeno Poppers. I'll take the new grilled version over the deep-fried breaded version any day of the week.

How can we lighten up all-American favorites? Any simple substitutions?

Allison: As you'd expect, many of these recipes had tons of cheese, breading and butter. Those are easy changes to make; I swapped out stronger flavored cheeses (Parmesan, sharp cheddar) for the milder cheeses. It's easy to cut butter's saturated fat with cooking method and ingredient choices (use Yukon Golds for mashed potatoes, they're naturally sweeter and creamier). And in baking, I use a lot of buttermilk. As for the breading, I'd try to find a cooking method that would give that crispy crunch with out all the bread calories, like roasting or grilling. But probably the biggest substitution I made was extending the dish. I would try to bulk out a dish, like say -- potato gratin, or Funeral Potatoes as I call it in the book with vegetables. I was always adding cups of broccoli or handfuls of spinach to dishes to add flavor, visual appeal, and volume. So you get the guilty pleasure with a serving size that satisfies.
My thoughts: The book itself is a substantial hardcover that includes breakfast, lunch, main dishes, side dishes, snacks & apps and desserts. It would make a great housewarming or holiday gift. I wasn't aware of some of the original southern recipes included in the book, but had fun trying them out for the first time. PS: Allison is also a mom of twin boys!

New York City: the perfect Christmas shopping destination

It may be hard to believe, but the festive season is once again just around the corner. This means it’s time to start thinking about your Christmas shopping, and for seasonal retail therapy, New York City is hard to beat. The run-up to December 25 is the perfect time to take a bite out of the Big Apple. The metropolis takes on a completely different look and feel ahead of the celebrations, with huge Christmas trees on display, singers serenading shoppers, festive window displays dazzling shoppers and more. It’s impossible not to be swept along by the buzz of the city’s streets.

To get the most from your trip, combine your shopping with plenty of sightseeing. For example, why not invest in some Circle Line Sightseeing tour tickets? These boat trips (coupon here) are a great way to see the city’s waterfront parks, famous bridges and skyline.

When you’re ready to start spending, Macy’s in Herald Square is the place to go. The world’s largest department store, it stocks virtually everything you could imagine. I like going there to people watch too. While you’re there, you can also check out the impressive Santaland. This festive scene includes everything from Christmas trees and toy trains to Santa himself.

Of course, it’s not only Macy’s that gets into the Christmas spirit. Boutiques and department stores throughout the city make an effort to dress up at this time of year. Some of the best window shopping can be found along Fifth Avenue and Madison Avenue.

It’s also worth battling through the crowds to get a glimpse of the big tree at the Rockefeller Center Plaza. It now boasts 30,000 lights and is a true spectacle. To see it at its best, head there after dark. There is also an ice rink in the plaza if you fancy testing your skating skills.

Another must-try in the city can be found at the FAO Schwartz toy store. It boasts a giant floor piano, which is great for kids and adults alike. To avoid long queues, it’s best to get there when the store opens, preferably on weekdays rather than Saturdays or Sundays.

While you’re in town, you might also want to catch a festive show. For example, Radio City Music Hall’s Christmas Spectacular is a real extravaganza and is ideal for families. Another favorite is St John the Divine’s Winter Solstice.

Whatever you do in New York City leading up to December 25, you’re bound to have a great time. Just make sure you have plenty of spare room in your suitcase to fit all those gifts in!

Go see Delivery Man

Today, Walt Disney Studios' Delivery Man opens in theaters everywhere. Yes, I realize Hunger Games: Catching Fire releases today too and I'll definitely be seeing that, but don't overlook Delivery Man.

I saw an advanced screening way back at the end of July and really enjoyed it. It surprised me how much so. Raphael also saw it and said he was laughing in almost every scene. It's heartwarming and a great start to the holiday season.

#SprintMom Event in NYC

Last week, I was invited to attend a #SprintMom blogger event in their offices in NYC to hear more about their network, devices, gadgets and app offerings.

Parent/Child Protections:

I was especially impressed with Sprint Guardian, a mobile application bundle that can help parents enforce responsible phone usage and keep families safe. Apps within the Sprint Guardian bundle allow parents to: lock their child’s phone on demand or schedule locks – during dinner, school or late at night (I think I need this for Raphael during dinner too); locate kids on a map and set up automatic location checks to get notified that kids made it to school safely and on time (Family Locator); automatically lock teenagers’ mobile phones when they’re driving over 10 MPH (Drive First), which frankly, I think I need so I don't set a bad example and to resist temptation. Sprint Drive First is available on Sprint Android™-powered smartphones for $2 per month per phone (excluding surcharges and taxes).

For parents getting ready to give their child their first phone, you should definitely check out Sprint's Customizable Parent-Child Mobile Phone Contract, you can then have your child agree to different terms like "never ignore moms calls," no phone at the dinner table, etc. I think it's a great idea to start a discussion before just giving them a phone.

Housewarming Bucket DIY

I attended a house warming party over the weekend and while I typically just bring a bottle of wine or liquor, I wanted to do something a bit more creative this time. I came across this Pin from Martha Stewart for making a housewarming bucket.


I had problems finding a standard silver-colored utility bucket, but found a prettier tin one at Target that was a smaller though. I filled the contents with some fun, yet useful items - a sponge, extension cord, Goo Be Gone, grill lighter, post-its, shopping list and tape.
I then used some green chalkboard paint for the first time and painted a square on the front of the bucket. I applied two coats and wrote "Welcome Home" with chalk.
It was a fun project to do as a housewarming gift for an apartments for rent in Rochester NY that was easy enough to do and my gift was definitely unique and the only one of its kind there, bonus!

Biggest Baby Shower, Fall

Last night, I once again attended Big City Mom's popular Biggest Baby Shower in New York City.

With how-to seminars and over 100 of the best companies in the baby industry attending it's the perfect way for expecting couples and new parents to test out, touch, feel and get educated on baby gear, products, foods, breast feeding tips, you name it! Not to mention all the free samples and a loaded goody bag that can compete with your own baby shower loot. (Since I was attending as media, I did NOT receive a gift bag).

Even now with my boys being 11-months-old, it was still worth going as a new mom to speak with brands about their toddler gear, sippy cups, clothing and baby food.

 
I once again spoke with organic food brands like Ella's Kitchen, Earth's Best and Happy Baby and was able to load up on some food pouches and toddler snacks for my duo, which is such a savings and a great way to try out new flavors and see which ones they like best before buying more. I was also able to grab some Enfamil Enfagrow toddler drinks, which the boys are now transitioning too along with real milk. 

My boys are now slowly moving away from their MAM Baby bottles (which we love), so I was super excited to pick up a pair of MAM's training cups.

Here is the display from one of my favorite baby brands Tiny Love. The boys still use their Magical Night 3-in-1 mobile projector and starry night light, which was being shown at their booth and we also have their Supermat for travel.   
 
Another great parenting brand Philips Avent was there featuring its Comfort double electric breast pump, which pumps directly into their popular bottles. Unfortunately for me, it launched in the spring shortly after I stopped pumping, but it's been getting great reviews by moms.

The Biggest Baby Shower also gives moms the chance to pamper themselves in true shower fashion with massages and make-up and hair makeovers. I received a 5 minute chair massage courtesy of Care.com and had some curls put in thanks to VO5 and their salon series products
