Let them eat cupcakes

Now that I got my coveted red KitchenAid mixer, I vowed that I'd bake more and not from a Pillsbury box either, but from scratch--even the icing. I'm all about cooking, but not so much baking, however, my recent success at making some yummy white chocolate & strawberry cupcakes, might lead to more baking...

I had saved the recipe from my Cupcake-a-day 2008 calendar.

For the cupcakes beat with a mixer the following ingredients for 2 to 3 minutes:
  • 1 cup (2 sticks) sweet butter, softened
  • 1 cup superfine sugar (I just used regular sugar tho)
  • 2 cups self-rising flour
  • 1 tsp. baking powder
  • 4 eggs
  • 1 tsp. strawberry extract (I could only find imitation strawberry extract)
Then mix in 1/2 cup of white chocolate chips and spoon the sticky mixture into 18 lined baking cups (I used silicon cupcake liners) and bake at 375 degrees for 20 minutes.

For the frosting, beat the following together:
  • 1 cup cream cheese, softened (I bought soft strawberry cream cheese instead for added flavor)
  • 1 1/2 cups confectioners' sugar
  • 1 tsp. vanilla extract
  • 3 tbsp. chopped fresh strawberries (I probably used more tho)

Here's the final result, they were incredibly gooey and sweet, enjoy!:
